FrozenFruitTreats

Frozen Fruit Treats. These are incredible! They each only contain fruit, no added sugar or other ingredients!

I have to admit, I have a big sweet tooth. And when I say big.. I mean BIG. It’s under control now, but it didn’t use to be. I grew up eating sugar, and not the natural kind. I ate processed foods, fast foods and anything that was sold in a box or a bag. I loved sour gummies, ice cream, candy bars and more. It’s safe to say that most nights I would snack on something full of sugar before drifting off to sleep. My late night snack of choice was anything frozen.

These days couldn’t be more different. While I still enjoy something sweet, I definitely do not crave the same foods as I once did. Fruit is by far my favorite treat, especially if it’s freshly picked. But there are other times, like late at night when I desire something frozen. Here are four of my favorite frozen treats, each containing only 1 ingredient; the fruit in which it is made from. No dairy, no gluten, no refined sugars or processed foods. Just fruit.

 

1) Frozen Grape Bites

ingredient: grapes
Simply wash grapes and remove them from the stem. Place them in a freezer safe container and place in freezer. You will be surprised how addicting they will become!

2) Banana Ice Cream

ingredient: banana
Freeze a handful of bananas. I personally like to freeze them with the peels on, but I read that you can just freeze them without the peel to make the next step easier. To peel a frozen banana, just cut it in half and use a knife to begin peeling it. You may have to let them sit for 5 minutes to begin thawing. Next, simply throw the frozen bananas in a blender and voila- Banana ‘Ice Cream’

3) Frozen Berry Kabobs

ingredient: berries (blueberries, blackberries and raspberries featured here)
Wash berries and place them on a bamboo skewer. Place in a freezer safe container and freeze.

4) Frozen Pineapple Pops

ingredient: pineapple
Cut up a pineapple and puree using a blender. Be sure to include as much juice from the pineapple as well. Pour the puree into popsicle molds and freeze. I love these molds.

Homemade_Yogurt

HomemadeYogurtTwo summers ago I took a Dairy Processing class at a local farm.  It was an amazing learning experience where I gained the skills to make my own yogurt, soft cheeses, buttermilk and ice cream. To be completely honest, I thought that the process in order to make yogurt was going to be extremely difficult and time consuming. I am happy to report that I was very wrong! Making yogurt is actually quite easy, and all you need is a starter, some whole milk, and a warm place to incubate the yogurt. For the last year and a half I did not have a yogurt maker and instead used a cardboard box and an old winter jacket to keep my yogurt warm. I finally bought myself a Folding Yogurt Maker and couldn’t be more pleased with my purchase. I bought the Brod & Taylor Proofer here. Check out how easy it is to use:

What You Need:
– 8 cups Whole Milk
– 1/2 cup of Store bought yogurt with active cultures (plain, full-fat, local and organic works best)
Yogurt Maker OR a Cardboard box and an old winter jacket
– Mason Jars, sterilized
– Food thermometer (a simple one like this is just fine)

Directions:
1. Clean and sterilize mason jars.
2. In a medium sized pot, heat the milk to 160F.
3. Carefully pour the milk into 4 mason jars and allow to cool. Cool milk to 115F. This takes about 40minutes. Add starter culture to the 4 jars (1/8cup to each). Stir in well.
4. As the temperature of the milk is nearing 115F, set up your Yogurt Maker. Once the milk hits 115F, cover the mason jars and place them within your machine. Options below:

*If you are using a Yogurt Machine, warm it to 110F. Cover the mason jars and place them inside the machine for 4-6 hours. Check periodically after the first 3 hours incase your starter had fast-acting culture and is done early. Your yogurt is done when you can tilt the jars without their contents flowing to the other end.
*If you do not have a Yogurt Maker, you can wrap your mason jars inside of an old winter jacket and sit them inside of a cardboard box. The goal here is to insulate the mason jars enough that the milk retains a high enough temperature for 6-8 hours or more in order for the process to complete. It’s best to jam the box as full as possible, using an extra blanket if you need and place the box in the warmest place in your home. You will know that your yogurt is done when you can tilt the jars without their contents flowing to the other end. If after 8 yours your yogurt has not set, this means that your ‘diy yogurt maker’ was unable to keep the milk warm enough.
5. The final steps is to remove the mason jars from your Yogurt Machine and refrigerate. Make sure you set aside 1/2 cup to be used as your started for next time!

ADD FLAVOR! This recipe makes Plain Yogurt. Add granola, fruit and natural sweeteners such as honey or maple syrup to flavor your yogurt! Enjoy.

As I’m sure you all know, a standard BLT (bacon, lettuce, tomato) is a sandwich made up of 5 main ingredients: bacon, lettuce, tomato, mayonnaise and bread. Drop the bread, swap the mayo for cream cheese, add a few finishing ingredients, stuff them inside of a cherry tomato and voila! You have yourself fun bite size appetizers that are sure to be a hit!

Ingredients:
– 20 cherry tomatoes
– 8 pieces of bacon, cooked and crumbled
– 1/2 cup cream cheese (full-fat)
– 2 tbsp finely chopped spinach
– 1 1/2 tbsp grated parmesan cheese
– dash of sea salt

Directions:
1. Cut the top of each tomato off (just a small slice).
2. Scoop out the pulp and seeds and set aside. You can discard or use for making salsa, pasta sauce etc. I used my 1/4tsp measuring cup to easily scoop out the pulp. A regular spoon was much too big for the job.
3. In a bowl, combine the remaining ingredients and mix. Spoon filling into each tomato (I again used my 1/4 tsp measuring cup). To crumble the bacon I placed the cooked strips in unbleached parchment paper and crumpled it with my hand. Keep refrigerated, serve and enjoy!

TheDip

TheDipLgOkay okay, so this may not be world famous, but it sure is famous. This Dip has been in my family for years and is well known by everyone we have ever been to school with, played sports with, attended potlucks with, had BBQs with and so on. It is so well liked that I can remember kids fighting over who would get my leftovers at school if I didn’t finish it for lunch (no joke).

“The Dip” as it’s known, is extremely easy to make.

Ingredients:
The Dip
– 2 Cups/500ML Sour Cream*
– 2 Cups/16oz Cream Cheese*
– 1/4 Cup of Taco Seasoning (I use this homemade recipe!)

Toppings
– Lettuce, chopped
– Tomatoes, diced
– Cheese, grated
Serve with chips (I love making these coconut oil tortilla chips)

Directions:
1. Place the sour cream, cream cheese and taco seasoning in a mixing bowl. Mix well using hand beaters. Refrigerate until use.
2. When ready to serve, place a thin layer of dip on a platter. I use a 1-Quart Quiche Pan like this one.  The Dip makes enough for two servings on this tray. Then simply chop, dice and grate enough vegetables and cheese to cover The Dip (you can put them on in any order, I always do the lettuce first, then tomatoes and end with cheese).
3. Serve with tortilla chips (homemade recipe) and enjoy!

* I choose organic full-fat sour cream and cream cheese and do my best to source locally when I can.

I simply LOVE blueberries.  When I can, I stock up on fresh organic berries in the summer and freeze them so I can enjoy them all year long. Not only do blueberries taste great but they rank the highest of any fruit for antioxidants and also contain a high amount of fiber and Vitamin C. Studies are finding that blueberry consumption is benefitting just about every system in the body. Blueberries have been shown to reduce damage to muscles after exercise, reduce the risk of neurodegenerative diseases, protect both the digestive tract and entire nervous system from oxygen damage and contain anti-cancer benefits. That’s a lot of punch for such a small fruit!
